Quick and Easy Shepherd's Pie

Quick and Easy Shepherd’s Pie is an entrée and side dish all in one. It’s fast enough to make on a weeknight and perfect for the whole family.

Ingredients
- 1 package On-Cor Gravy & 6 Salisbury Steaks
- 1 cup frozen peas & carrots thawed
- 4 cups mashed potatoes
Instructions
- Preheat oven to 375°F. Spray 4-6 mini Dutch Ovens or individual ramekins with nonstick cooking spray.
- Cook the On-Cor Gravy & Salisbury Steaks in the microwave according to package directions. Let stand 1 to 2 minutes before removing with oven mitts from microwave.
- Remove the Salisbury Steaks from the gravy and cut each steak into bite-size pieces.
- Spoon a layer of mashed potatoes into the bottom of a mini Dutch Oven or ramekin. Add one chopped Salisbury Steak on top of the potatoes with ¼ cup gravy and then add a layer of peas and carrots. Spoon or pipe on another layer of mashed potatoes to cover the peas and carrots. Repeat with remaining ramekins. Reserve the remaining gravy for serving.
- Bake in preheated oven for 30 minutes or until the potatoes begin to lightly brown.
- Serve with reserved gravy and a fresh green salad.
