Ingredients

  • 4 5 ounce each salmon fillets
  • ⅛ teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon mild curry paste
  • juice of ½ lime
  • 1 teaspoon honey

Instructions

  1. Preheat the broiler and place the oven rack 6 inches from the heat. Line a baking sheet with foil and lightly coat with cooking spray.
  2. Arrange the salmon fillets on the prepared baking sheet. Sprinkle with salt.
  3. In a small bowl, whisk together the olive oil, curry paste, lime juice and honey. Brush the curry sauce over the salmon fillets.
  4. Place the baking sheet under the broiler until the salmon is just cooked through, 5 to 7 minutes depending on the thickness of the fillets. Serve.
