Quick Gyoza dipping sauce
This Gyoza sauce recipe is a delicious, super quick Japanese dipping sauce for potstickers (gyoza dumplings), tofu, rice bowls or even stir-fries. The magic happens with a blend of soy sauce, garlic, ginger, a touch of honey and rice vinegar. This mix creates a savoury, slightly sweet flavour that adds a delicious umami kick to any dish.

Ingredients
- 4 tablespoons rice vinegar 60ml
- 4 tablespoons dark or light soy sauce or regular Japanese soy sauce (Shoyu) 60ml
- ½ teaspoon sesame oil 2.5ml
- 1 teaspoon crushed garlic 5ml
- ½ teaspoon finely grated ginger 2.5ml
- ½ teaspoon dried chilli flakes 2.5ml
- 1 teaspoon honey (optional) 5ml
Instructions
- Add all ingredients to a bowl and mix until well combined. Ensure the honey is well incorporated as it's consistency tends to make it sink towards the bottom.
- Divide into dipping bowls and serve.

Notes
- Yep, you can leave it out.
- No, you can have it straight from the fridge or at room temperature.
- You can decide how spicy you would like your Japanese Gyoza sauce by adjusting the quantity of chilli flakes or chilli oil you add.
- You can also leave it out entirely if you don't want a hot sauce.
- Something on the milder side may be more suitable for the whole family, especially where small children are involved.
- In theory, not really. It contains a lot of sodium which is a very good preserving agent.
- However, personally, we would not keep it for longer than a month to be on the safe side. Ensure you only keep clean sauce that's not been used for dipping food in.
- It will be vegan-friendly if you leave out the optional honey, other than that, all the ingredients are vegan.
