Quick Lemon Vinaigrette

The possibilities are endless with this lemon vinaigrette! Mix up an extra big batch and pour over pasta salad, use as a dip or a marinade!

Ingredients

  • ¼ cup olive oil or vegetable oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white vinegar
  • 2 teaspoons granulated sugar or to taste
  • 2 teaspoons Dijon mustard
  • 1 clove garlic minced (optional)
  • 1 tablespoon fresh herbs any combination of chives, dill, or parsley
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. Combine all ingredients in a jar. Shake well to combine.
  2. Drizzle over salad to taste.
  3. Store in the refrigerator up to one week (if using minced garlic, read notes below).

Notes

  • Store in the refrigerator immediately for up to 2-3 days.
