Ingredients

  • 2-3 carrots
  • 1/4 cup sugar
  • 1 tbsp salt
  • 1/2 cup rice wine vinegar
  • 1 cup water

Instructions

  1. Shred up or spiralize a carrot and place it inside a mason jar or airtight container. Use two if necessary.
  2. In a bowl, whisk together the sugar, salt, rice wine vinegar, and water until everything is well mixed.
  3. Pour the liquid over the carrots and then place it in the fridge for at least 4 hours before serving or store for up to 2 weeks.
