Quick Seafood Pasta

Easy seafood pasta recipe, made with clams, mussels, squid and shrimp in a creamy tomato sauce. A quick, delicious meal ready in 20 min!

Ingredients

  • 400 g pasta I've used fresh spaghetti
  • 1 red onion finely chopped, small
  • cherry tomato halved, handful
  • 450 g seafood mix frozen or fresh
  • 2 tablespoon extra-virgin olive oil
  • lemon zest of half lemon
  • parsley finely chopped, fresh; handful
  • basil finely chopped, handful, fresh
  • sea salt freshly cracked, to taste
  • black pepper freshly cracked, to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil.
  2. In the meantime, heat a large pan with the olive oil, over medium heat.
  3. Add in onion and tomatoes and cook, stirring often, for about 5 mins. Season to taste.
  4. Fold in the seafood mix and continue to cook for a further 5-6 mins, or until the seafood are cooked through.Season with salt and pepper to taste
  5. When the water boils, drop the pasta in and cook al dente, about 2-3 mins if using fresh pasta.
  6. Transfer the pasta into the pot with the seafood sauce and stir all ingredients together. Sprinkle with lemon zest, freshly chopped basil and parsley on top, and drizzle with a little bit of extra olive oil if you like. Serve immediately, family-style directly from the pot.
