Quinoa Black Bean Burritos
Quinoa Black Bean Burritos combine fluffy, seasoned quinoa with heated black beans and fresh vegetables wrapped in whole wheat tortillas. Ingredients
- 1 cup quinoa uncooked
- 2 cups of water
- 1 teaspoon cumin or taco seasoning, or more to taste
- 2 black beans 15-ounce) cans
- 8 whole wheat tortillas
- 1 large yellow onion sliced
- 1 large tomato sliced
- 1 avocado sliced
- ¼ cup vegan salad dressing or your choice of sauce or salsa, creamy
Instructions
- Rinse quinoa well, then drain. Place both water and quinoa in a saucepan and bring to a boil over medium high heat. Cover, and simmer for 10-15 minutes until cooked. When finished, remove from heat and let sit for about 5 minutes. Add cumin or taco seasoning to taste and stir.
- Meanwhile, heat both cans of black beans in a saucepan over medium heat.
- Heat tortillas and layer with quinoa, beans (drain them with a strainer spoon before you place in burritos), onions, tomatoes, avocado, and a drizzle of sauce mixture. Wrap and enjoy.
Notes
- Season the quinoa to your taste, as plain quinoa can be mild and needs flavor adjustment.
- Warm tortillas before assembly to make them more flexible and prevent tearing during folding.
- Avoid overfilling burritos to maintain ease of rolling and prevent splitting.
- To add a crispy exterior, pan-fry the rolled burritos briefly or bake them at 350°F (180°C) for 10-12 minutes.
