Ingredients

For Salad
  • 2 Cups quinoa cooked and chilled
  • 1 Cup edamame Boiled and Chilled
  • 1/2 red pepper diced
  • 1/2 Cup corn
  • 1/4 Cup cabbage shredded
  • 1/4 Cup green onions chopped
For Vinaigrette (you may not use it all)
  • 1/2 Cup olive oil
  • 1 Teaspoons sesame oil
  • 1/4 Cup rice wine vinegar
  • 1/2 Tablespoon Dijon mustard
  • 1 Teaspoons soy sauce

Instructions

For Salad
    Cup of Yum
  1. Combine all the ingredients
For Vinaigrette
  1. Toss all liquids together until combined
Assembly:
  1. Add the vinaigrette little by little until desired flavor is achieved. You may no need to add the entire vinaigrette
  2. Chill in the fridge
