Ingredients

  • 2 cups cooked quinoa
  • 1/4 cup bread crumbs
  • 2 medium green onions, finely chopped
  • 3 large eggs
  • 2 tbsp chopped fresh dill or basil
  • 1 tsp lemon zest
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 2 tbsp olive or avocado oil

Notes

  • * My kids like these patties with a savoury mint yogurt. Stir together 1/2 cup thick pain Greek yogurt with 2 tbsp chopped fresh mint leaves and 1 tsp lemon juice.
