Quinoa Salad Recipe

Perfect as is or as a base recipe, this Quinoa Salad Recipe is a simple quinoa salad with a citrus dressing and lots of veggies.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • Pinch of red pepper flakes
  • 1/2 cup cherry tomatoes, cut in half
  • 1/4 cup diced red onion
  • 1/4 cup sliced green onions
  • 1/4 cup diced red bell pepper
  • 1/2 - 1 avocado pitted, peeled and cubed
  • chopped cilantro

Instructions

  1. Rinse the quinoa very well.
  2. Place the quinoa and the vegetable broth in a pot over medium heat and bring to a boil. Reduce the het to medium low and cover the pot. Simmer until the quinoa is tender and the broth is absorbed, about 10-15 minutes. Set aside to cool.
  3. To make the dressing, whisk together the olive oil, lime juice, cumin, salt and red pepper flakes.
  4. Combine the quinoa, tomatoes, red onion, green onion, bell pepper and avocado in a large bowl. Pour the dressing over the top and gently stir to combine.
  5. Serve topped with chopped cilantro, if desired.
