Perfect as is or as a base recipe, this Quinoa Salad Recipe is a simple quinoa salad with a citrus dressing and lots of veggies.

Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lime juice
- 1 teaspoon ground cumin
- 1 teaspoon salt
- Pinch of red pepper flakes
- 1/2 cup cherry tomatoes, cut in half
- 1/4 cup diced red onion
- 1/4 cup sliced green onions
- 1/4 cup diced red bell pepper
- 1/2 - 1 avocado pitted, peeled and cubed
- chopped cilantro
Instructions
- Rinse the quinoa very well.
- Place the quinoa and the vegetable broth in a pot over medium heat and bring to a boil. Reduce the het to medium low and cover the pot. Simmer until the quinoa is tender and the broth is absorbed, about 10-15 minutes. Set aside to cool.
- To make the dressing, whisk together the olive oil, lime juice, cumin, salt and red pepper flakes.
- Combine the quinoa, tomatoes, red onion, green onion, bell pepper and avocado in a large bowl. Pour the dressing over the top and gently stir to combine.
- Serve topped with chopped cilantro, if desired.
