Ingredients

  • 3 cups quinoa cooked
  • 1 ½ cups cherry tomato halved
  • 1 cup cucumber seeds removed, diced
  • 2 tbs green onion finely chopped; or scallions
  • lime juice of 1 large
  • 2 tbs cilantro finely chopped
  • 2 tbs olive oil
  • salt to taste
  • black pepper to taste
  • To serve:
  • salad greens
  • Pickled red onion Cebollas curtidas or pickled

Instructions

    Cup of Yum
  1. Mix the tomatoes, cucumber, green onions, cilantro, lime juice, olive oil, salt and pepper in a bowl.
  2. Add the cooked quinoa and mix well.
  3. Place the quinoa salad on the salad greens and top with the curtido or pickled onions.
