Ingredients
- 3 cups quinoa cooked
- 1 ½ cups cherry tomato halved
- 1 cup cucumber seeds removed, diced
- 2 tbs green onion finely chopped; or scallions
- lime juice of 1 large
- 2 tbs cilantro finely chopped
- 2 tbs olive oil
- salt to taste
- black pepper to taste
- To serve:
- salad greens
- Pickled red onion Cebollas curtidas or pickled
Instructions
- Mix the tomatoes, cucumber, green onions, cilantro, lime juice, olive oil, salt and pepper in a bowl.
- Add the cooked quinoa and mix well.
- Place the quinoa salad on the salad greens and top with the curtido or pickled onions.
