Ingredients
- 3 cups cooked quinoa
- 1 ½ cups cherry tomatoes halved
- 1 cup diced cucumber seeds removed
- 2 tbs finely chopped green onions or scallions
- Juice of 1 large lime
- 2 tbs finely chopped cilantro
- 2 tbs olive oil
- salt and pepper to taste
- To serve:
- salad greens
- Cebollas curtidas or pickled red onions
Instructions
- Mix the tomatoes, cucumber, green onions, cilantro, lime juice, olive oil, salt and pepper in a bowl.
- Add the cooked quinoa and mix well.
- Place the quinoa salad on the salad greens and top with the curtido or pickled onions.
