Ingredients

  • 3 cups cooked quinoa
  • 1 ½ cups cherry tomatoes halved
  • 1 cup diced cucumber seeds removed
  • 2 tbs finely chopped green onions or scallions
  • Juice of 1 large lime
  • 2 tbs finely chopped cilantro
  • 2 tbs olive oil
  • salt and pepper to taste
  • To serve:
  • salad greens
  • Cebollas curtidas or pickled red onions

Instructions

    Cup of Yum
  1. Mix the tomatoes, cucumber, green onions, cilantro, lime juice, olive oil, salt and pepper in a bowl.
  2. Add the cooked quinoa and mix well.
  3. Place the quinoa salad on the salad greens and top with the curtido or pickled onions.
