Quinoa Tabbouleh Salad {gluten free, dairy free}

Ingredients

For Quinoa Salad:
  • 1 cup quinoa any variety
  • 2 cups water
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes halved
  • ½ cup roasted red pepper chopped
  • 1 cucumber seeded and diced
  • 1 cup fresh parsley chopped
  • ½ cup fresh mint chopped
  • ½ red onion peeled and finely diced
  • ½ cup kalamata olives pitted and sliced
For Dressing:
  • Juice and zest of two lemons
  • ⅓ cup olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp dried oregano
  • 1 clove garlic peeled and minced
  • salt and pepper to taste

Instructions

  1. Rinse the quinoa in a mesh colander before beginning.
  2. Add the quinoa, 1 tbsp olive oil, and water to a medium sized pot, and bring to a boil over medium-high heat. 
  3. When water boils, reduce heat to simmer and cover the pot. Simmer for about 15 minutes, until water is absorbed. Remove from heat and fluff the quinoa with a fork.
  4. Toss quinoa with remaining salad ingredients.
  5. In a small bowl, whisk together all dressing ingredients. Toss quinoa salad with the dressing.
  6. You can eat the salad right away or allow it to chill for 30 minutes in the fridge first.
