Ingredients

  • 4 cups chopped kale
  • 1 ½ cup chopped cucumber
  • 1 ½ cup snap peas trimmed
  • 1 cup chopped tomatoes
  • 1 cup cooked quinoa
The Dressing:
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons Tahini
  • 1 tablespoon warm water
  • 1 teaspoon agave nectar

Instructions

  1. Place the kale in a colander and run warm water over it while massaging the leaves until the kale softens.
  2. In a large bowl, combine the kale, cucumber, snap peas, tomatoes and quinoa. Toss with the dressing. Serve.
The dressing:
  1. In a small glass bowl, whisk together the lemon juice, tahini, water and agave nectar. If the tahini is difficult to whisk, microwave the mixture on HIGH for about 10 seconds.
