Quinoa with tomatillo and cilantro sauce

Quinoa with tomatillo and cilantro sauce combines cooked quinoa with a smooth, tangy sauce made from blended tomatillos, fresh cilantro, lime juice, onion, garlic, and optional jalapeño. The sauce adds a bright, slightly spicy flavor that transforms the quinoa into a flavorful side dish, served warm or cold.

Ingredients

  • 4-5 cups quinoa from about 1 ½ cups of uncooked quinoa - can also use cooked rice, cooked
For the tomatillo and cilantro sauce:
  • 6 tomatillos washed and quartered
  • 1 cilantro washed and large parts of stems removed, bunch
  • lime juice from 1
  • 2 tbs onion white, chopped
  • 2 garlic crushed, cloves
  • 1 hot pepper jalapeño or serrano - optional
  • salt to taste
  • black pepper to taste

Instructions

  1. Combine the tomatillos, cilantro, lime juice, chopped onions, crushed garlic, hot pepper (if using), salt and pepper to taste in a blender, mix until a smooth sauce is obtained.
  2. Mix the sauce with the cooked quinoa, serve warm. Can also be made ahead and re-heated before serving. You can also serve as a cold side dish.
