Quinoa with tomatillo and cilantro sauce
Description
This dish features a sauce prepared by blending tomatillos, cilantro, lime juice, white onion, crushed garlic, and a hot pepper like jalapeño or serrano together with salt and black pepper to taste. The resulting smooth sauce has a fresh, citrusy tang and herbal notes from the cilantro, with optional heat from the pepper.
The sauce is stirred into cooked quinoa, coating the grains evenly. Quinoa’s nutty, slightly fluffy texture meets the creamy, bright sauce, making a balanced side or light main dish. It can be served warm shortly after mixing or chilled and reheated as desired.
Ingredients
- 4-5 cups quinoa from about 1 ½ cups of uncooked quinoa - can also use cooked rice, cooked
For the tomatillo and cilantro sauce:
- 6 tomatillos washed and quartered
- 1 cilantro washed and large parts of stems removed, bunch
- lime juice from 1
- 2 tbs onion white, chopped
- 2 garlic crushed, cloves
- 1 hot pepper jalapeño or serrano - optional
- salt to taste
- black pepper to taste
Instructions
- Combine the tomatillos, cilantro, lime juice, chopped onions, crushed garlic, hot pepper (if using), salt and pepper to taste in a blender, mix until a smooth sauce is obtained.
- Mix the sauce with the cooked quinoa, serve warm. Can also be made ahead and re-heated before serving. You can also serve as a cold side dish.
