Rainbow slaw

This bright slaw-style salad is a simple mix with a light vinaigrette-style dressing that goes well with a range of dishes.

Ingredients

  • ½ cup carrot (½ cup is 1 medium) coarsely grated
  • 1 ½ oz Snow peas ( 1 ½oz is around ½ cup once thinly sliced)
  • 1 cup red cabbage shredded
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon lime juice
  • 2 tablespoon vegetable oil
  • 1 teaspoon sugar or honey

Instructions

  1. Mix together the carrot, radish and red cabbage in a bowl.
  2. In a small dish, mix together the vinegar, lime juice, oil and sugar until blended then pour over the vegetables and toss to coat them all.
  3. Serve soon after making for best crispness.
