Ingredients
- 2 lices bread (gluten-free if required)
- 2 tablespoon hummus
- 1 tomato sliced
- 2 radishes thinly sliced
- ½ carrot grated
- ¼ yellow bell pepper seeded and sliced
- ½ cup lettuce
- ¼ cup shredded red cabbage
- salt and pepper
Instructions
- Spread both slices of bread (toasted if desired) with the hummus.
- Add the sliced veggies, in layers, to the bottom slice of bread, season with salt and pepper, add the top slice of bread and enjoy!
