Ingredients
- 2 cups elbow macaroni, uncooked
- 1 beaten egg
- ½ cup milk
- ½ cup sour cream
- 1 (1-ounce) packet ranch dry seasoning
- 1 ½ cups shredded sharp cheddar cheese, divided
- 1 ½ cups shredded mozzarella cheese, divided
- 8 lices cooked diced bacon
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Spray a muffin tin with non-stick cooking spray and set aside.
- Bring a large pot of water to a boil and cook the macaroni until al dente. Drain and set aside.
- In a large bowl whisk together the egg, milk, sour cream, and ranch packet. Add 1 ¼ cup cheddar cheese and 1 ¼ cup mozzarella cheese.
- Add the macaroni noodles and bacon to the bowl and toss to coat the noodles completely.
- Spoon the macaroni mixture into the prepared muffin tin. Sprinkle the reserved cheese on top and bake for 30 minutes or until the tops are brown and they are heated throughout.
- Allow them to cool for a few minutes and serve! Garnish with chopped parsley if desired.
