Raspberry Lemon Overnight Oats

These raspberry lemon overnight oats combine rolled oats, yogurt, protein powder, lemon zest and fresh raspberries for a refreshing, easy make-ahead breakfast that's packed with protein.

Ingredients

  • ½ cup old fashioned rolled oats
  • ½ cup unsweetened almond milk or oat milk
  • ¼ cup full fat plain Greek yogurt or vegan yogurt
  • 1 Tablespoon vanilla protein powder
  • 1 teaspoon chia seeds
  • 1 teaspoon lemon zest
  • ½ teaspoon pure maple syrup
  • ¼ cup fresh raspberries plus more for topping

Instructions

  1. Add oats, milk, yogurt, protein powder, chia seeds, lemon zest, maple syrup into a bowl or jar and stir together. Gently stir in the raspberries.
  2. Cover and place in the fridge overnight. If you’re in a rush you can shorten the soak time to 2-4 hours.
  3. The next morning (or when ready to eat), remove the lid and give the oats a big stir. If they seem too thick you can add a little more milk to loosen the mixture. Top with additional raspberries and serve.
