- 6 egg whites (150g) at room temperature
- 1 ½ cups granulated sugar (300g) (weighing by grams is easier and more accurate)
- 1 lb raspberries (frozen and defrosted),
- ½ cup pistachios , toasted and chopped
- 2 cups Cream for sandwiching together
