Ingredients

For Cake
  • 6 tablespoons all purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1 tablespoon vegetable oil
  • 4 tablespoons sour cream divided
  • 4 tablespoons + 1 tablespoon milk
  • 1 tablespoon lemon juice
  • 8 raspberries
Vanilla Glaze
  • 4 tablespoons powdered sugar
  • 1 tablespoon milk
  • 2 teaspoons vanilla extract

Instructions

  1. Add the flour, sugar and baking powder in a mixing bowl and whisk together
  2. Add the oil, sour cream, milk, and lemon juice and mix until well combined
  3. Fold in the raspberries and transfer to your favorite mug
  4. Microwave for 1 1/2 to 2 minutes
  5. For the glaze, add the powdered sugar, 1 Tablespoon milk, and vanilla. Stir well until mixed and drizzle over your hot mug cake
  6. Enjoy!
