This Raspberry Vinaigrette blends fresh or thawed raspberries with olive oil, red wine vinegar, maple syrup, shallots, and salt, creating a smooth, balanced dressing with a fruity tang and mild sweetness. It complements salads by adding brightness and subtle complexity.
Ingredients
- 1/2 cup raspberries or thawed from frozen, fresh
- 1/4 cup extra-virgin olive oil

- 2 tablespoons maple syrup
- 1 tablespoon shallot or red onion, finely chopped
- 1/4 teaspoon salt fine sea salt
Instructions
- Add the raspberries, olive oil, vinegar, maple syrup, shallot, and salt to a blender and blend until very smooth. Taste the dressing and make any adjustments, as needed.
