Instructions

  1. Add the raspberries, olive oil, vinegar, maple syrup, shallot, and salt to a blender and blend until very smooth. Taste the dressing and make any adjustments, as needed. For a sweeter dressing, add another tablespoon of maple syrup. For more tangy flavor, add a squeeze of lemon juice, or extra raspberries.
  2. Transfer the dressing to a storage jar with a lid, and serve over your favorite salad ingredients. Raspberry vinaigrette can be stored in an airtight container in the fridge for up to 4 days.
