Raspberry Vinaigrette
Description
The vinaigrette uses fresh raspberries pureed with extra-virgin olive oil and red wine vinegar to create a smooth, vibrant dressing. Maple syrup adds sweetness balanced against the acidity, while finely chopped shallots provide gentle sharpness and texture contrast. A touch of fine sea salt rounds out the flavor.
The preparation is straightforward, combining all ingredients in a blender until smooth. Taste adjustments can be made by increasing maple syrup for sweetness or adding lemon juice or additional raspberries for tang.
Stored in a sealed container in the refrigerator, the dressing maintains quality for up to four days. It works well over leafy greens and fresh salad ingredients, lending a fruity, lightly sweet layer without overpowering other components.
Honey can substitute for maple syrup if a non-vegan version is acceptable.
Ingredients
- 1/2 cup raspberries or thawed from frozen, fresh
- 1/4 cup extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons maple syrup
- 1 tablespoon shallot or red onion, finely chopped
- 1/4 teaspoon salt fine sea salt
Instructions
- Add the raspberries, olive oil, vinegar, maple syrup, shallot, and salt to a blender and blend until very smooth. Taste the dressing and make any adjustments, as needed. For a sweeter dressing, add another tablespoon of maple syrup. For more tangy flavor, add a squeeze of lemon juice, or extra raspberries.
- Transfer the dressing to a storage jar with a lid, and serve over your favorite salad ingredients. Raspberry vinaigrette can be stored in an airtight container in the fridge for up to 4 days.
Notes
- Nutrition values provided assume about 2 tablespoons per serving from a batch yielding approximately ¾ cup.
- Maple syrup can be replaced with honey if a non-vegan sweetener is preferred.
- Adjust sweetness or tang by adding more maple syrup, lemon juice, or fresh raspberries as desired.
- Store the vinaigrette in an airtight container in the refrigerator for up to 4 days.
