Raw Broccoli Salad

A crunchy raw broccoli salad with Asian-inspired flavors!

Ingredients

  • 8 cups broccoli florets
  • 1/2 red onion sliced thin, approximately 1 cup
  • 3/4 cup golden raisins
  • 3/4 cup salted cashews
  • 2 tablespoons sesame seeds toasted
Mayo Dressing
  • 1 cup mayonnaise approxomately 7.75 oz
  • 5 teaspoons seasoned rice vinegar
  • 1 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon white pepper

Instructions

  1. Prep Mayo: In a small bowl, add all of the mayo dressing ingredients and whisk until well combined. Set aside.
  2. Assemble Salad: Add broccoli florets, onion, raisins, and cashews to a large bowl and mix. Add mayo dressing and mix well until it's all well combined.
  3. Chill: Cover and store in the fridge for at least 1 hour to chill before serving.
  4. Serve and Enjoy!

  • This salad is great to make ahead. Preferred is to prep the salad ingredients separately from the mayo and then assemble it all an hour before serving.

  • Broccoli:  Be sure to use fresh! 
  • Onions: A sweet yellow onion can be used, too. But red is really the best. 
  • Raisins: Regular raisins are delicious, too!
  • Cashews: Almonds, walnuts, and hazelnuts are good subs. But cashews are really the best in this salad.
