A crunchy raw broccoli salad with Asian-inspired flavors!

Ingredients
- 8 cups broccoli florets
- 1/2 red onion sliced thin, approximately 1 cup
- 3/4 cup golden raisins
- 3/4 cup salted cashews
- 2 tablespoons sesame seeds toasted
Mayo Dressing
- 1 cup mayonnaise approxomately 7.75 oz
- 5 teaspoons seasoned rice vinegar
- 1 1/4 teaspoon ground ginger
- 1/2 teaspoon ground coriander
- 1/4 teaspoon white pepper

Instructions
- Prep Mayo: In a small bowl, add all of the mayo dressing ingredients and whisk until well combined. Set aside.
- Assemble Salad: Add broccoli florets, onion, raisins, and cashews to a large bowl and mix. Add mayo dressing and mix well until it's all well combined.
- Chill: Cover and store in the fridge for at least 1 hour to chill before serving.
- Serve and Enjoy!

- This salad is great to make ahead. Preferred is to prep the salad ingredients separately from the mayo and then assemble it all an hour before serving.
- Substitutions
- Substitutions
- Broccoli: Be sure to use fresh!
- Onions: A sweet yellow onion can be used, too. But red is really the best.
- Raisins: Regular raisins are delicious, too!
- Cashews: Almonds, walnuts, and hazelnuts are good subs. But cashews are really the best in this salad.
