Ingredients

  • 1 cup almonds (soaked overnight and drained)

  • ¼ cup raw cacao powder
  • ¼ cup coffee (brewed and cooled)
  • ¼ cup coconut flour
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon cinnamon (optional)
  • ¼ teaspoon sea salt
  • ¼ cup shredded coconut (for topping, optional)

  1. Prepare Base Mixture: In a food processor, combine the soaked almonds and medjool dates. Blend until finely ground, resembling a dough-like consistency.
  2. Add Dry Ingredients: Add raw cacao powder, coconut flour, cinnamon (optional), and sea salt to the almond-date mixture. Pulse until well combined.
  3. Add Coffee: Gradually pour in the cooled coffee and vanilla extract. Blend until the mixture becomes smooth and sticky.
  4. Shape the Cupcakes: Scoop spoonfuls of the mixture into mini muffin tins or silicone cupcake molds. Press the mixture down firmly to compact it.
  5. Chill and Set: Place the molds in the refrigerator for at least 2 hours to firm up the cupcakes.
  6. Garnish and Serve: Once set, top each cupcake with shredded coconut if desired. Serve chilled.
