Ingredients

  • 1 Graham Cracker Crust
  • 3 cups strawberries chopped
  • 1 ½ cups blueberries
  • 1 ½ cups raspberries
  • 3 tablespoons corn starch
  • ⅓ cup sugar
  • 1 tablespoon lemon juice
  • ¼ teaspoon nutmeg
  • 1 pinch salt
  • 2 tablespoons apple or apricot preserves melted

Instructions

    Cup of Yum
  1. Lightly toss berries together.
  2. Take ½ of the berry mixture and place it in a small saucepan with the sugar, cornstarch, nutmeg, and salt.
  3. Simmer 5-7 minutes, mashing periodically. Blend until smooth in a blender or with an immersion blender, if desired. The mixture should be thick like jelly.
  4. Add the lemon juice to the berry puree.
  5. Pour the berry puree into the graham cracker crust.
  6. Toss the remaining berries with the melted preserves.
  7. Gently spoon the remaining berries evenly on top of the puree.
  8. Cover lightly and refrigerate at least 3 hours, up to 12.
  9. Serve with whipped cream.

Notes

  • Flaky crust: Use a buttery, flaky pie crust to complement the juicy berry filling.
  • Sweetness level: Adjust the sugar depending on the sweetness of your berries for the perfect balance.
  • Thickening: Cornstarch or tapioca works well to thicken the berry juices and keep the filling from being too runny.
  • Serving tip: Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
