Dominican Sofrito & Sazón is a blend of fresh cubanelle peppers, garlic, red onion, cilantro, and spices cooked gently and blended into a coarse paste. This seasoning mix forms a flavorful base for many Dominican dishes, lending herbal, savory, and slightly pungent notes. It serves well as a marinade, stew foundation, or flavor enhancer, preserving a balance of aromatic herbs and spices.
Ingredients
- 2 cubanelle pepper cubanelle pepper) diced
- 6 clove garlic crushed
- 1 red onion cut into strips, medium
- 3 bunches cilantro chopped
- 1 teaspoon annatto powder aka bija, achiote
- 1 tablespoon oregano (dry, ground) fresh leaves, or 1 teaspoon dry
- ¼ teaspoon salt
- 1 tablespoon olive oil
Instructions
To use immediately
1. Cook
- Saute all the ingredients at very low heat until they release their flavor and the onions have become translucent. Continue with your cooking preparation.
To store
1. Blend
- Combine the ingredients and mix in a blender until you obtain a coarse paste.
2. Store
- Keep refrigerated for up to a week. Or freeze in a zippy bag for up to a month.
Notes
- If used in stews, substitute oregano and coriander with a bouquet garni of thyme, cilantro, and oregano.
- This quantity yields about 1 cup of seasoning, sufficient for multiple uses such as beans, rice dishes, and meat marinades.
- Adjust garlic, onion, and cilantro amounts before blending according to taste preferences.
- "Ajíes gustosos" peppers can replace cubanelle for authentic flavor if available.
- Keep refrigerated up to one week or freeze for longer storage.
