[Recipe + Video] Dominican Sofrito & Sazón
Description
This Dominican Sofrito & Sazón recipe combines diced cubanelle peppers, crushed garlic, red onion strips, chopped cilantro, annatto powder, oregano, salt, and olive oil. The ingredients are first gently sautéed over low heat to soften and release their flavors without browning. After cooling, they can be blended into a coarse paste or left chunky depending on the intended use.
The mix brings a fresh yet earthy flavor with a noticeable presence of garlic, bright pepper notes, and herbal undertones from cilantro and oregano enhanced by the color and subtle sweetness of annatto powder. It adds depth as a base layer in savory dishes or as a marinade, complementing beans, rice, meats, or vegetables.
When using for stews, oregano and coriander can be replaced by a bouquet garni of thyme, cilantro, and oregano for traditional flavor. Sofrito can be refrigerated for up to a week or frozen to extend shelf life. Adjustments in garlic, onion, and cilantro quantities are possible to suit personal preferences before blending.
