Red Cabbage Slaw

Red Cabbage Slaw uses thinly sliced red cabbage marinated in apple cider vinegar mixed with kosher salt, black pepper, olive oil, and optional honey for sweetness. The marination softens the cabbage slightly while retaining a crisp texture, making it a tangy, mildly sweet side dish or topping.

Ingredients

  • 1 red cabbage cored and sliced, head
  • 1/2 cup apple cider vinegar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper ground
  • 1 tablespoon honey , optional
  • 1 tablespoon olive oil

Instructions

    Cup of Yum
  1. Chop, minced or shred cabbage as desired. Place in a large mixing bowl.
  2. Toss with apple cider vinegar. (If using honey, whisk with apple cider vinegar before adding to cabbage).
  3. Toss with Kosher salt, ground black pepper and olive oil.
  4. Cover, refrigerate and marinate for 1 hour to 24 hours.
  5. Toss again and drain before serving.
