Red Cabbage Slaw
Description
The Red Cabbage Slaw combines cored and sliced red cabbage with apple cider vinegar, kosher salt, ground black pepper, and olive oil. When honey is used, it’s whisked with vinegar beforehand, introducing subtle sweetness that balances the tang of the vinegar. The mixture is refrigerated to marinate from one hour up to 24 hours, allowing the flavors to meld and slightly soften the cabbage without losing its crunch. Before serving, the slaw is tossed again and any excess liquid drained to ensure a bright, crisp texture.
Ingredients
- 1 red cabbage cored and sliced, head
- 1/2 cup apple cider vinegar
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper ground
- 1 tablespoon honey , optional
- 1 tablespoon olive oil
Instructions
- Chop, minced or shred cabbage as desired. Place in a large mixing bowl.
- Toss with apple cider vinegar. (If using honey, whisk with apple cider vinegar before adding to cabbage).
- Toss with Kosher salt, ground black pepper and olive oil.
- Cover, refrigerate and marinate for 1 hour to 24 hours.
- Toss again and drain before serving.
