Red Velvet Crinkle Cookies
Description
The cookies start by mixing red velvet cake mix with extra flour, eggs, oil, and vanilla extract until smooth. The dough is then shaped into balls about one tablespoon each, rolled generously in powdered sugar, and baked at 350°F until the edges set and crack, revealing the crinkled surface. Cooling on the baking sheet helps cookies hold together before transferring to wire racks.
The texture is tender and cakey, differing from traditional cookie dough due to the cake mix base. The powdered sugar coating not only affects appearance but adds a sweet, melt-in-your-mouth surface contrast. Optionally, the cookies can be cut into heart shapes after baking for a decorative touch, but are equally enjoyable round.
These cookies can be served as a festive treat and are easy to portion, making them suitable for gifting or celebrations. The cake mix base simplifies ingredients while delivering the red velvet flavor and color.
Ingredients
- 1 red velvet cake mix I used Duncan Hines, box
- 2 tablespoons all-purpose flour
- 2 egg large
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- powdered sugar for rolling the cookies
- Heart shaped cookie cutter optional
Instructions
- Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper or a Silpat and set aside.
- In a large bowl, combine cake mix and flour. Whisk until clumps disappear. In the bowl of a stand mixer, mix together cake mix, flour, eggs, oil and vanilla extract. Mix until smooth. Take about 1 tablespoon of cookie dough and form into a ball. Roll the ball in powdered sugar until fully coated. Place cookie dough balls on prepared baking sheet. Bake for 10 minutes, or until edges are set and cookies begin to crack.
- Let cookies sit on baking sheet for 2 minutes. If desired, cut cookies into heart shapes, using a heart shaped cookie cutter. Transfer cookies to a wire cooling rack and cool completely. Eat the cookie scraps:)
- Note-you don't have to cut the cookies into heart shapes. They are great round too!
