Ingredients

  • 2 ½ cups white chocolate chips divided
  • 14 ounce can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 3/4 cup red velvet cake mix
  • Sprinkles optional

Instructions

  1. Place 2 cups white chocolate chips, sweetened condensed milk, and vanilla in a large microwave-safe bowl. Microwave in 30-second intervals, stirring often, until chips are melted and the mixture is smooth.
  2. Stir in red velvet cake mix until the color is uniform.
  3. Place the batter in the freezer for 30 minutes or until it can be scooped and holds its shape.
  4. Scoop the batter using a cookie dough scoop and roll it into smooth balls. Place them on a baking sheet lined with parchment paper.
  5. Melt the remaining ½ cups of white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring often. Transfer the melted chips to a small ziplock baggie.
  6. Cut a small corner off the bag and drizzle the melted chips over the truffles, adding the sprinkles before it hardens.

Notes

  • When melting the white chocolate chips with sweetened condensed milk, microwave in 30-second intervals and stir often. 
  • When you stir in the red velvet cake mix, make sure the color is uniform for a beautiful, rich red hue.
  • Don't skip the chilling step! If the batter is too warm, it will be too sticky to handle.
  • Use a cookie dough scoop to get uniform-sized truffles. Then roll them between your palms to get a smooth, round shape.
