- Place 2 cups white chocolate chips, sweetened condensed milk, and vanilla in a large microwave-safe bowl. Microwave in 30-second intervals, stirring often, until chips are melted and the mixture is smooth.
- Stir in red velvet cake mix until the color is uniform.
- Place the batter in the freezer for 30 minutes or until it can be scooped and holds its shape.
- Scoop the batter using a cookie dough scoop and roll it into smooth balls. Place them on a baking sheet lined with parchment paper.
- Melt the remaining ½ cups of white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring often. Transfer the melted chips to a small ziplock baggie.
