Ingredients
For the Dressing
- 2 Tbsp honey
- 1 lemon, zested (roughly 1 tsp of zest)
- ½ tsp thyme
- ¾ c Moscato or Pinot Grigio wine
For the Salad
- 8 c watermelon, cubed
- 1 pint blueberries roughly 2 ½ cups
Instructions
- In a small saucepan, heat honey, lemon zest, and thyme over medium low heat for 2-3 minutes, until the honey is runny and the mixture is fragrant. Remove from heat and let cool slightly. Whisk in wine and set dressing aside to cool.
- Once the dressing is cool, place watermelon cubes and blueberries in a large bowl. Pour the dressing over the fruit and toss to coat.
- This dish can be served immediately or refrigerated overnight to let the flavors infuse the fruit.
