Red Wine Braised Chicken with Mushrooms features chicken legs seared and then cooked in a rich sauce made from cremini mushrooms, yellow onions, garlic, chicken broth, and red wine. The slow braising develops tender meat and a deeply flavored reduced sauce, balancing earthy mushroom notes with the acidity of the wine.
Ingredients
- 4 tablespoons olive oil , divided
- 6 chicken legs
- 1 teaspoon kosher salt , divided
- 1/2 teaspoon black pepper divided, coarse ground
- 8 ounces cremini mushroom sliced
- 1/2 large yellow onion , diced
- 2 cloves garlic , minced
- 1 cup chicken broth
- 2 cups red wine
Instructions
- Add 2 tablespoons olive oil to a dutch oven on medium heat.
- Season the chicken with half the salt and pepper and sear on both sides, 4-5 minutes on each side.
- Remove chicken from the pan, then add in the remaining olive oil.
- Add in the mushrooms and onions and sear well until browned, about 6-8 minutes.
- Season with remaining salt and pepper, add in garlic and stir.
- Add in the chicken broth, stir and cook until reduced by half, about 10 minutes.
- Add in the red wine, nestle the chicken back into the pot and cook for 20-25 minutes until sauce is reduced by 75%.
