Red Wine Steak Sauce

Ingredients

  • 1 cup dry red wine
  • 1/4 cup finely chopped shallots
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce 
  • 1 sprig fresh thyme
  • salt and black pepper to taste
  • 1 tablespoon cold butter for finishing

Instructions

  1. In a medium saucepan, heat olive oil and 2 tablespoons butter over medium heat.
  2. Add shallots and garlic, sauté until softened, about 2-3 minutes.
  3. Pour in the red wine, increase heat to medium-high, and simmer until reduced by half, about 5-7 minutes.
  4. Add beef broth, tomato paste, Dijon mustard, Worcestershire sauce, and thyme sprig. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat and simmer for about 10-12 minutes, or until the sauce has thickened and reduced by about one-third.
  6. Remove the thyme sprig.
  7. Season with salt and pepper to taste.
  8. Remove from heat and swirl in the cold butter until melted and incorporated.
  9. Serve immediately over grilled or pan-seared steak.

Notes

  • Choose a wine you'd enjoy drinking for the best flavor in the sauce.
  • For a smoother sauce, you can strain it after step 6 if desired.
  • Store this sauce in an airtight container in the refrigerator for up to 1 week.
