Refreshing Rhubarb Smoothie

This delicious, refreshing Rhubarb Smoothie is made with fresh strawberries and infused with cooled green tea or matcha tea.  It's only naturally sweetened and easy to adapt.

Ingredients

  • 1 cup brewed green tea or matcha tea cooled (236 ml)
  • ¼ cup unsweetened almond milk or more to taste 59 ml
  • 1 ½ cups fresh or frozen chopped rhubarb About 2 rhubarb stalks or 200 grams
  • 1 cup fresh sweet strawberries 150 grams
  • ½ to 1 small banana depending on how sweet you want it.
  • 1 teaspoon raw honey optional

Instructions

  1. Put all the ingredients in a blender and blend until smooth.
  2. Taste test and add additional sweetner if preferred.

Notes

  • Storage: This rhubarb smoothie is best enjoyed fresh after blending. However, if you need to store it, keep it in an airtight container in the refrigerator for up to a day. Give it a good stir before serving.
  • Variations:
  • Add unflavored protein powder, chia, or flax seeds for an extra nutritional boost.
  • Add more almond milk, or try oat milk, cashew, or coconut milk. 
  • Add one teaspoon of raw honey or maple syrup if you love a sweeter flavor.
