Ingredients
- 1 .5 oz can whole tomatoes with juice
- 1 oz can rotel diced tomatoes and green chiles
- ¼ onion, diced
- 2 green onions, chopped
- ¼ cup fresh cilantro, chopped
- ½ jalapeno, diced
- 1 clove of garlic, minced
- Juice from half a lime
- ⅛ tsp oregano
- ⅛ tsp cumin
- Sea salt and freshly cracked pepper, to taste
- pinch of sugar, to taste
Instructions
- Combine the whole tomatoes, Rotel tomatoes, onion, green onion, cilantro, jalapeno, minced garlic, lime juice, oregano, cumin, sea salt, and freshly cracked pepper, to taste, and a pinch of sugar in a food processor (or blender).
- Pulse until you get the consistency you prefer, about 15 pulses. Taste and adjust seasoning if needed.
- Place into the refrigerator for 30-60 minutes before serving. Enjoy.
