Ingredients

  • 1 .5 oz can whole tomatoes with juice
  • 1 oz can rotel diced tomatoes and green chiles
  • ¼ onion, diced
  • 2 green onions, chopped
  • ¼ cup fresh cilantro, chopped
  • ½ jalapeno, diced
  • 1 clove of garlic, minced
  • Juice from half a lime
  • ⅛ tsp oregano
  • ⅛ tsp cumin
  • Sea salt and freshly cracked pepper, to taste
  • pinch of sugar, to taste

Instructions

  1. Combine the whole tomatoes, Rotel tomatoes, onion, green onion, cilantro, jalapeno, minced garlic, lime juice, oregano, cumin, sea salt, and freshly cracked pepper, to taste, and a pinch of sugar in a food processor (or blender).
  2. Pulse until you get the consistency you prefer, about 15 pulses. Taste and adjust seasoning if needed.
  3. Place into the refrigerator for 30-60 minutes before serving. Enjoy.
