Rhubarb Moscow Mule

This rhubarb Moscow mule is a great way to use up leftover rhubarb juice! It's spicy and refreshing.

Ingredients

  • ice
  • 2 ounces rhubarb juice (e.g. from stewed rhubarb you've used to make a pie or crumble with)
  • 2 ounces vodka
  • Spicy ginger beer
  • lime wedge

Instructions

    Cup of Yum
  1. Fill mule mug halfway with ice.
  2. Add in the rhubarb juice and vodka. 
  3. Top up with spicy ginger beer. 
  4. Give the drink a stir and add a lime wedge if desired. Enjoy immediately.
