Rice Krispie Balls

Ingredients

  • 1 cup corn syrup
  • 1 cup powdered sugar
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 4 cups rice krispie cereal

Instructions

  1. In a large saucepan, over medium-high heat, add the corn syrup and sugar. Stir constantly while you bring it to a boil.
  2. Remove the pot from the heat and add the peanut butter and vanilla. Stir until smooth.
  3. Mix in the cereal. Stir until well-coated.
  4. Use a silicone mat or wax paper. Drop the mix, a spoonful at a time, onto the mat. Roll the drops into balls and cool.

Notes

  • Note. Remove the sugar and corn syrup mixture just as it is beginning to boil otherwise overheating will end up creating a dry and crumbly treat.
  • Store in an airtight container for up to 3 days. To freeze, arrange the balls on a baking sheet and place in the freezer. Once frozen transfer to a freezer Ziploc and freeze for up to 3 months. Thaw before eating.
