Rice Porridge with Tasty Pork Meatballs

This rice porridge features tender pork meatballs simmered in a savory broth combined with jasmine rice, garlic, ginger, and soy sauce to create a comforting dish. The process involves making small seasoned meatballs and cooking them gently in broth before melding with partially cooked rice, resulting in a creamy, flavorful congee-style meal. Garnished with spring onions and black pepper, it delivers warmth and subtle umami notes.

Description

Rice Porridge with Tasty Pork Meatballs involves preparing bite-sized pork meatballs mixed with garlic, ginger, soy sauce, salt, and pepper. Jasmine rice is rinsed thoroughly and par-cooked before being combined with hot vegetable broth, garlic, ginger, soy sauce, and the meatballs simmered within. This melding of components cooks together to produce a soft, creamy porridge with tender meatballs dispersed throughout.

The texture is creamy and smooth from the rice porridge, with the meatballs offering a pleasant bite and flavor contrast from the seasoning. Fresh spring onions and a sprinkle of black pepper finish the dish with brightness and a slight heat.

This dish serves well as a soothing meal suitable for any time of day, providing gentle flavors and nourishing warmth consistent with traditional rice porridge dishes enhanced by the savory meatballs.

Ingredients

Servings

For the Rice Porridge:

  • 200 g jasmine rice
  • 1.5 l vegetable broth
  • 2 garlic chopped
  • ginger small piece, chopped
  • 2 spring onions
  • 3 Tablespoons soy sauce
  • salt
  • black pepper

For the Meatballs:

  • 400 g pork, ground minced
  • 1 garlic chopped
  • ginger small piece, chopped
  • 2 Tablespoons soy sauce
  • salt
  • black pepper

Instructions

  1. For the pork meatballs, add all ingredients to a large bowl and mix together.
  2. Form into balls (just 1/2 inch in diameter, approximately) and store in the refrigerator.
  3. Place the rice in a pot; add enough water to cover the rice. Shake the water in the pot to rinse the rice and drain.
  4. Repeat the rinsing process until the rice water is clean, about 6 to 8 times. Add 3 cups of water to the drained rice in the pot with a lid and cook the rice for 12 min.
  5. Meanwhile in another pot, put the broth to heat.
  6. When the broth is hot (it should not boil), add the pork meatballs, garlic, ginger and soy sauce. Let the meatballs cook in the broth for about 4 minutes.
  7. At this point you can add the rice to the broth with the meatballs and arrange with salt.
  8. Let it cook together for about 10 minutes or longer if you prefer a creamier consistency.
  9. Our rice porridge is ready, decorate the dish with spring onions and a sprinkling of black pepper.
