Riganato - Greek Sautéed Beef Liver

Ingredients

  • ½ kg beef liver thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 lemons juiced
  • 1 tbsp mustard
  • 1 garlic clove finely chopped
  • 2 tsp oregano
  • 1 tsp thyme finely chopped
  • salt
  • pepper

Instructions

  1. Slice the liver thinly and evenly so that it doesn't get under or overcooked.
  2. Place a pan over a high heat. When hot, add the olive oil, then the liver and season with salt and pepper.
  3. Sauté for 1 minute until golden on one side, turn over and sauté for 1 more minute.
  4. Add the lemon juice, mustard, garlic, oregano, thyme and stir.
  5. Cook the liver for 2-3 minutes (no more than that, because it will harden) and serve.
