Ingredients

  • 1 1 lb baby potatoes cut in half
  • 1 1 lb carrots chopped
  • 1 1 medium onion diced
  • 2 2 tablespoons butter melted
  • 2 2 tablespoons olive oil
  • 1 1 tablespoon Italian seasoning
  • 1 1 teaspoon EACH: garlic powder, onion powder, and pepper
  • ½ ½ teaspoon salt
  • ¼ ¼ cup grated Parmesan cheese
  • 2 2 tablesoons minced parsley

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper. Place the potatoes, carrots, and onion in a large mixing bowl. Add the butter, olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper and mix well.
  2. Transfer the veggies to the baking sheet and spread them out so that they're in a single layer. Sprinkle the parmesan cheese over the top. Bake for 40-45 minutes, until the potatoes and carrots are tender.
  3. Remove the pan from the oven and parsley. Serve right away.
