Roast Leg of Lamb
This Roast Leg of Lamb recipe features a boneless 5-pound leg seasoned with a mix of minced garlic, fresh rosemary, kosher salt, and coarse black pepper. The lamb is rubbed with olive oil and the herb mixture before roasting at a moderate temperature. The roasting process includes an initial phase with foil to keep moisture, followed by uncovered roasting to develop a browned crust. After resting, the lamb is tender and flavorful, suitable for a main dish served with side vegetables or potatoes.
