  • 1 tablespoon olive oil
  • 9 cloves garlic , minced
  • 2 tablespoons rosemary minced, fresh
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper coarse ground

Instructions

  1. Preheat oven to 325 degrees.
  2. Rub lamb with olive oil.
  3. Mix together the garlic, rosemary, salt and pepper and rub it all over the lamb.
  4. Place onto rack in pan and roast for 1 hour, tented with foil.
  5. Remove foil and cook for 20 minutes (then start checking for doneness - 145 degrees with thermometer).
  6. Let rest 10 minutes before serving.
