Roasted Aloo Gobi (Indian Spiced Potato & Cauliflower)
Roasted Aloo Gobi combines tender cauliflower florets and cubed potatoes seasoned with a blend of Indian spices like cumin, turmeric, coriander, and Kashmiri chili powder. The vegetables are mixed with sliced onions, tomatoes, and oil then roasted or air-fried until cooked through with a slightly crisp texture. A finishing touch of lime juice and fresh cilantro brightens the rich, earthy spices. This recipe offers a well-balanced savory side or vegetarian option with complex fragrant notes from its spice blend.
Ingredients
- 1 cauliflower medium, rinsed & cut into florets (about 1.25 lbs or 4 cups, Gobi
- 1 potato peeled, cut into small cubes (about 1 cup)
- 1/2 cup onion sliced
- 1/2 cup tomato chopped
- 2 tablespoon neutral cooking oil I used Avocado oil, generic cooking oil
Spices
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin powder aka Jeera powder
- 1/2 teaspoon turmeric powder ground, aka Haldi powder
- 1 teaspoon coriander powder dhaniya powder
- 1/2 teaspoon Kashmiri red chili powder
- 1 teaspoon salt adjust to taste
To Finish
- 1 teaspoon lime juice
- cilantro chopped, to garnish, leaves
Instructions
- In a large bowl, add the cauliflower florets, potatoes, onions, tomatoes, oil and all spices. Mix until well combined.
Air Fryer Method
- Transfer the spiced cauliflower and potatoes to the air fryer basket. Make sure they are spread in a single layer.
- Air Fryer at 380F for 12-15 minutes.
- Sprinkle the lime juice and mix. Adjust salt, and spices to your liking.
- Transfer to a serving bowl. Garnish with chopped cilantro and enjoy!
Oven Method
- Preheat oven to 400F. Spread the spiced cauliflower and potatoes on a baking tray or a large oven-safe ceramic baking dish in a single layer.
- Bake for 25-30 minutes until they are well cooked and tender inside. Sprinkle the lime juice and adjust spices. Transfer to serving bowl and enjoy.
Notes
- For a low-carb or keto option, omit the potatoes and use just cauliflower.
- Adding fresh grated ginger with the spices can introduce more depth to the flavor.
- Fresh minced garlic may be substituted for garlic powder for a stronger garlic flavor.
