Roasted Aloo Gobi (Indian Spiced Potato & Cauliflower)
Description
Roasted Aloo Gobi (Indian Spiced Potato & Cauliflower) features medium cauliflower florets and small diced potatoes tossed with onions, tomatoes, and two tablespoons of neutral oil. The spice blend includes garlic powder, cumin, turmeric, coriander, Kashmiri red chili powder, and salt, which infuse the vegetables with a warm, fragrant flavor profile. The mixture is cooked either in an air fryer at 380°F for 12-15 minutes or baked in an oven at 400°F for 25-30 minutes until tender.
The roasting method results in vegetables with a lightly crisp exterior and soft interior, enhanced by the vibrant spices and a fresh squeeze of lime juice. Garnishing with chopped cilantro adds a fresh herbal note. This dish serves well as a flavorful vegetable side or a light vegetarian component in a meal.
The recipe includes options to customize by omitting potatoes for a low carb or keto version and suggests adding grated ginger or fresh minced garlic in place of garlic powder for varied taste. The lime juice added just before serving balances the spices and adds brightness.
